These Sausage & Cheese Mini Frittatas are so good, that my kids gobble them all up in one sitting. Half the time they don’t even wait to be seated with silverware. The mini size is perfect for grabbing and popping in your mouth!
Sausage & Cheese Mini-Frittatas

Start with the basic frittata recipe and add in whatever you like. My kids love them with sausage and cheese.
Ingredients
- Basic Mini Frittata Recipe:
- 8 eggs
- ½ cup milk
- ½ tsp sea salt or ¼ tsp of regular salt
- ¼ tsp black pepper
- For Sausage & Cheese Mini Breakfast Frittatas:
- 1 TBSP butter
- ½ cup diced onions
- 1 cup cheddar cheese or your personal favorite
- 1 cup chopped up favorite breakfast sausage. I love linguisa, an awesome portuguese breakfast sausage.
Instructions
- Pre-heat oven to 350 degrees.
- Cook & chop up breakfast sausage in a skillet, over medium heat.
- Remove from pan onto plate lined with paper towels to drain fat.
- Add onions & butter to hot skillet. Cook about 5 minutes until the onions are translucent.
- In a bowl beat the eggs.
- Add milk, salt & black pepper.
- Add sausage & onion mixture.
- Using non-stick spray, generously spray a muffin tin.
- Fill the muffin cups ¾ the way full.
- Divide and sprinkle the cheese on the top of the frittatas.
- Bake 20-25 minutes or until a knife comes out clean.
- Let the frittatas sit for 2-3 minutes and run a knife around the edge of cups.
- Pop out and enjoy!
Notes
I love the basic frittata recipe because it’s one of those, “clean your fridge out” recipes. You can add whatever you have in your fridge: bell peppers, bits of broccoli, bacon, ham, black olives. Whatever your heart desires or your taste buds crave!
