The first time my hubby brought me home to meet his parents, my mom-in-law made this Healthy Chocolate Mousse. I was in love at first bite! It’s so creamy and rich that if I wasn’t already so smitten with her son, this dessert could have easily tipped the scales in his favor!

Quick & Easy, Healthy Chocolate Mousse
Dessert, Healthy, Low-Fat

  • 1 (12 oz) Tub Cool-Whip Lite
  • 2 (1.4 oz) Packages Jello-O Instant, Sugar-Free, Fat-Free, Chocolate Fudge Pudding
  • 2 Cups cold Non-Fat Milk

  1. Beat pudding mix & 2 cups cold Non-Fat Milk with whisk for 2 minutes.
  2. Using a spatula, fold in tub of Cool-Whip Lite.
  3. Chill for at least 30 minutes in refrigerator.
  4. Enjoy plain or add your favorite topping: fresh berries, marshmallows, mini-chocolate chips, or chopped up candy bar. Yum!

The great thing about this recipe is its versatility. Make it with different flavors of pudding, sugar-free Cool-Whip, or if you’re feeling particularly daring, full on fat pudding and regular Cool-Whip, oh yeah!

    Yes, this may be “lite” on sugar and calories but this can’t possibly be labeled as healthy. Cool Whip Lite contains hydrogenated vegetable oil and a lot of other preservatives that I can’t seem to pronounce.

    We checked out the calories and each serving is 135 calories. Of course, this would be changed if you decided to add yummy toppings, but even eaten alone it super delicious! Enjoy! 🙂
