Oatmeal Craisin Cookie with Maple Cream Cheese Frosting

This is the perfect cookie to have for dessert and eat for breakfast with a hot cup o’ joe.  I always make sure and save a few to secretly eat after my kiddos have gone off to school!

Oatmeal Craisin Cookies with Maple Cream Cheese Frosting

Ingredients
  • OATMEAL COOKIES:
  • 1 cup of butter
  • 1 cup packed brown sugar
  • ½ cup sugar
  • 2 eggs
  • 2½ tsp vanilla
  • 1¼ cup flour
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp salt
  • 2½ cups oatmeal
  • 1 cup craisins
  • 1 cup chopped nuts. I add either pecans or walnuts.
  • MAPLE CREAM CHEESE FROSTING:
  • 4 oz cream cheese
  • ¼ cup butter
  • 1 cup confectioners’ sugar
  • 2-3 tsp maple flavored extract. I usually add more because I like a strong maple flavor.
  • Cream all ingredients until smooth

Instructions
  1. Preheat oven to 325 degrees.
  2. In a mixer cream butter and the sugars together.
  3. Add and mix in eggs.
  4. Add and mix vanilla.
  5. In a separate bowl add and mix: flour, cinnamon, salt, baking soda & oatmeal.
  6. Add dry ingredients to mixer and mix until incorporated.
  7. Mix in craisins & nuts.
  8. Put in fridge for 30 minutes. This is helpful to let the butter harden back up or else you’ll have flat cookies.
  9. Drop tablespoon balls onto cookie sheet.
  10. Bake for 12 minutes.
  11. Take them out and let them sit for 5 minutes and then frost with Maple Cream Cheese Frosting.
  12. Once cooled, store in an air tight container in the fridge.
