Mango, Strawberry & Goat Cheese Bruschetta

This Mango, Strawberry & Goat Cheese Bruschetta recipe has deliciousness written all over it!  Add this to your recipe book for a great summer appetizer or snack.  The sweetness of the honey, mango and strawberry tastes awesome with the spice of the jalapeno and creaminess of the goat cheese.  I’m not going to name names, but when we made this yesterday, someone had more than their fare share *cough, cough, Sarah.*  Yummers.

Mango, Strawberry & Goat Cheese Bruschetta
Appetizer

 

Ingredients
  • 1 cup chopped mango
  • ½ cup chopped strawberries
  • ⅓ cup diced red onion
  • 1 TBSP diced cilantro
  • 2 tsp lime juice
  • ¼ tsp cumin
  • ½ tsp diced jalapeno
  • 2 TBSP honey
  • ¼ lb goat cheese
  • one french baguette

Instructions
  1. Combine mango, strawberries, red onion, cilantro, lime juice, cumin and jalapeno.
  2. Put in fridge to chill for at least 30 minutes.
  3. Cut baguette into 14, ½ inch slices.
  4. Smear bread with ½ TBSP of goat cheese.
  5. Drizzle honey on top of cheese.
  6. Divide mango & strawberry salsa onto the top of the cheese.
  7. Enjoy!
