Grilled Artichokes with Lemon-Basil Dipping Sauce

I was in 10th Grade when I ate my first artichoke. I was having dinner at my friend Michelle’s house, when her mom brought out a plate of freshly steamed artichokes. I was in complete heaven. Then at dinner, before Prom, I ordered an artichoke for my entree. My dinner was an artichoke. That pretty much sums up my love for them. Years later, when I ate my first grilled artichoke, I fell in love all over again. Artichokes, on the grill? Yes, please. Oh my God, yes please.

I just made these today and while the kids were at the park, finished off two of them. What? Don’t hate. They’re that good.

Grilled Artichokes with Lemon-Basil Dipping Sauce

Ingredients
  • 2 artichokes, cut in half with the middle fuzz scooped out
  • 1 teaspoon lemon pepper
  • ⅓ cup olive oil
  • 2 fresh basil leaves, Julienned
  • 2 garlic cloves, smashed
  • 1 lemon cut in half, 1 Tablespoon juice squeezed out
  • ½ cup mayo
  • 1 Tablespoon olive oil mixture
  • 1 Tablespoon ketchup
  • *optional ½ tsp sriracha rooster sauce

Instructions
  1. Olive Oil Mixture: In a glass bowl, mix together olive oil, basil and garlic. Heat in microwave for 20 seconds. Mix and heat again for 20 seconds.

  3. After artichokes are cut in half, fuzz scooped out, quick rinse to get all fuzz off, take half a lemon and rub all over artichoke. Inside and out.
  4. Steam artichokes for 25 minutes. Cut side facing down in pan.

  6. Lemon Basil Dipping Sauce: In a microwaveable bowl combine: mayonnaise, ketchup, 1 Tablespoon lemon juice, 1 Tablespoon olive oil mixture, ½ teaspoon Sriracha Roster Sauce (optional) Heat in microwave for 15 seconds. Stir, heat again for 15 seconds, stir.

  8. When artichokes are done being steamed, take out and rub 1 teaspoon olive oil mixture, front and back of artichoke. Season with ½ teaspoon of lemon pepper on cut side of artichoke. Place, cut side down, on high grill and grill for 10-12 minutes. Remove.

  10. Enjoy with dipping sauce!
