It’s Monday, and I don’t know about you, but I’ve only had one cup of coffee and am barely functioning. My brain is beyond the realm of even thinking of something funny or witty to write. But honestly, this recipe for Greek Salad and Dressing speaks for itself. I’ve been making it for years and it’s always one of my go to salads. Want to make it a meal? Double up on the dressing and use it to marinade chicken or shrimp, grill the meat and top off the salad. Perfect. Now excuse me, while I go hook the coffee directly up to my IV.
- Salad Ingredients:
- One head of Roman lettuce
- 3 Roma Tomatoes
- One can Black or Kalamata Olives
- Feta Cheese~ plain or flavored
- 1-2 Cucumbers~ peeled and cut into bite size chuncks
- ½ Red Onion sliced
- Dressing:
- ½ Cup Extra Virgin Olive Oil
- ¼ Cup lemon juice
- 1½ Tablespoon Red Wine Vinegar
- 2 garlic cloves diced
- 1½ teaspoon oregano
- ½ tsp sea salt or garlic salt
- ¼ tsp pepper
- In a mason jar combine all ingredients for the dressing.
- Shake, shake, shake!
- Assemble salad and pour dressing over and mix together.
- I usually use ½ the dressing to toss the salad with and then each person can add more to their plate depending on their taste.
