Copycat Larabars ~ Gluten Free!

I just ate my first Larabar last week, and it was like I had died and gone to heaven! I know, I’m a day late to the party in discovering the deliciousness of the Larabars, but I’m here now and ready to eat!

These suckers are so crazy good, that besides a snack, I’ll nibble on one for dessert. The only hold back, in scarfing my face with the incredible bars, is the hefty price tag attached to them. Spending over a dollar for one bar is a bit pricey, especially when I’ve got three big kid mouths to feed too.

So, I used the magic, that is the internet, and found some awesome sites with amazing Larabar recipes. Here’s my take on two:

Copycat LaraBars


  • 1 Cup whole dates
  • ½ cup unsweetened dried blueberries
  • ½ cup walnuts
  • ½ cup oatmeal (not quick-oat) *Make sure if you’re making these bars Gluten free to use Gluten free oats!
  • ¼ teaspoon cinnamon
  • *

  • 1 cup whole dates
  • ½ cup unsweetened, dried cherries
  • ½ cup walnuts
  • ½ cup cashews
  • 3 Tablespoons dark chocolate chips
  • dash of sea salt

  1. Combine all ingredients together in a food processor and pulse until blended.
  2. To make bars: press into a loaf pan, chill for 10 minutes, take out and cut into size bars you prefer.
  3. I like to press into a mini- muffin pan, chill for 10 minutes, and then use a knife to pop those suckers out!
  4. Will stay up to two weeks in fridge.

*I only own a mini food processor. So, I blended each ingredient individually, put them in a big bowl, and kneaded with my hands to combine all ingredients together. *You can find a great selection of dried fruit at Trader Joes. If I can’t find unsweetened fruit for a reasonable price, I do use sweetened dried fruit, because I’m naughty like that.

  • These recipes are ridiculously easy and taste crazy good! Plus, their are so many endless ways to make different flavors! And I wish there were more hours in the day. Or that I had my own personal assistant I could boss around! I’m still trying to find one who would work on hugs & wine. 😉

    We’ve been getting Larabars…I may have to try out your recipes and save some dough! But, do you have a way to add hours to the day? I’m still waiting for that post… 🙂
