Chocolate Shortbread Square

I have been thoroughly enjoying watching the London Olympics, and have found myself rooting for England as much as I have been rooting for the good ole’ USA.  I admit that it probably has much to do with the fact that my mother-in-law is from England, but with goodies like tea and crumpets and words like lovely and darling, who wouldn’t want to root for England?

Shortly before the Olympics started, my mother-in-law was in England visiting her mother, who lives near London, and came across this recipe for Chocolate Shortbread Squares and, thankfully for us, brought it home.  She not only showed up at my house yesterday with the recipe for me, but she also showed up with the Chocolate Shortbread Squares that she had already made AND the Royal Albert plate on which I could take pictures.  Score!

There are still a few days left of the London Olympics, so have a lovely time watching them while enjoying these Chocolate Shortbread Squares which go amazingly well, my darlings, with a nice cup of tea.

Chocolate Shortbread Squares
Dessert

 

Ingredients
  • Base
  • ½ cup butter
  • ⅔ cup flour
  • ¼ cup sugar
  • pinch of salt
  • *
  • Filling
  • ½ cup margarine
  • 2 tbsp honey
  • ½ cup light brown sugar
  • 1 – 14oz can condensed milk
  • few drops of vanilla
  • *
  • Topping
  • 4 oz plain dark chocolate, broken into pieces

Instructions
  1. Base
  2. Preheat oven to 350 degrees
  3. Grease 7X7 square pan
  4. Mix butter, flour, sugar and salt in a bowl until combined
  5. Pour mixture into the greased pan and press down to compact
  6. Bake 25 minutes
  7. Set aside to cool down
  8. *
  9. Filling
  10. Melt margarine, honey, milk and sugar in pan and bring to a boil, while stirring the whole time.
  11. Reduce heat and let simmer for 7 minutes, while stirring the whole time.
  12. Mix in a few drops of vanilla and let cool.
  13. Once the mixture is cool, pour over the base.
  14. *
  15. Topping
  16. Melt chocolate gently over a pan of hot water
  17. Beat until smooth and pour on top of filling, covering everything.
  18. Let cool in the refrigerator for about an hour.
  19. Cut up into squares and serve.
