Chocolate Mint Cookies

These Chocolate Mint Cookies are made with Andes Mint baking pieces and are seriously like a little piece of heaven in your mouth!  I remember having my first taste of Andes Mints when I was about 5 or 6 years old.  My dad had convinced me to let him pull my loose tooth out by saying he would reward me with one of his precious Andes Mint afterwards.  Boy was the reward worth the fear!  Not only will these cookies melt in your mouth, but they are so good it’s impossible to eat just one.

Ingredients
  • ¾ cup butter
  • 1½ cup packed brown sugar
  • 2 tbsp water
  • 2 cups semisweet chocolate chips
  • 2 eggs
  • 2½ cups all-purpose flour
  • 1¼ tsp baking soda
  • ½ tsp salt
  • 1 bag of Andes mint baking pieces

Instructions
  1. In a large pan over low heat, mix butter, sugar and water until butter is melted. Add chocolate chips and stir until all the chocolate is completely melted. Pour into a large mixing bowl and let stand for 10 minutes to cool off.
  2. At a high speed beat in eggs, one at a time, into the chocolate mixture. Reduce speed to low and add dry ingredients until blended. Add entire package of Andes mint baking pieces and fold into dough. Chill dough in the refrigerator for 1 hour.
  3. Preheat oven to 350 degrees F
  4. Roll dough into balls and place on an un-greased cookie sheet about 2 inches apart and bake for 8-10 minutes.

Notes
My local grocery store did not carry the Andes mint baking pieces, but I was able to find them at Target. So check there if your local grocery store doesn’t carry them.
